Cooking for One: Ground Turkey Three Ways!

For the Ground Turkey Nachos:
  • 1/2 lb. ground turkey
  • 3 garlic cloves
  • Red Pepper Flakes
  • Chives
  • Ancho Chili Powder
  • Onion Powder
  • Paprika
  • Cumin
  • 1 Jalapeno
  • 1 Tomato
  • Cheddar Cheese
  • Tortilla Chips
  • 1 can black beans
  • Cilantro
  • Olive Oil
For the Turkey Salad:
  • Ground Turkey Mixture
  • Lettuce
  • Diced Tomatoes
  • Salt
  • Red Wine Vinegar
  • Olive Oil
For the BBQ Blue Cheese Turkey Burgers:
  • 1/4 to 1/2 lb. ground turkey
  • BBQ Sauce
  • Burger Bun
  • Tomato
  • Lettuce
  • Bleu Cheese
  • Salt and Pepper
  • Garlic Powder
  • Olive Oil

Directions for Ground Turkey Nachos:


  1. Begin by warming 1/4 cup of milk in a saucepan
  2. Heat 1 tbsp. in large saute pan of medium heat
  3. Smash and peel 3 garlic cloves and mince about 1 tbsp. 
  4. Add garlic, 1 tsp of salt, pepper, ground cumin, garlic powder, paprika, onion powder and 1/2 tsp of ancho chili powder to season the oil
  5. Add the ground turkey and brown
  6. With the milk slightly boiling add 4 oz. of cheddar cheese turn off heat and let melt stirring occassionally
  7. Strain one can of black beans
  8. Add black beans to turkey and stir
  9. Take tomato remove stem, cut into planks, then strips, and then dice
  10. Take 1/2 Jalapeno and slice thinly
  11. Take cheese then add to ground turkey mixture, adding small amount of milk to smooth out and make creamy
  12. Add mixture over nachos reserving a small amount of Turkey mixture
  13. Top with diced tomatoes, jalapeno slices and garnish with cilantro

Instructions for Turkey Salad:

  1. Take a handful of lettuce
  2. Add diced tomatoes
  3. Season with 1 tsp of salt
  4. Add 2 dashes of Red Wine Vinegar
  5. Add 1 tsp of Olive Oil
  6. Then add Turkey Mixture on top
  7. Serve

Instructions for BBQ Bleu Cheese Turkey Burger:

  1. Season ground turkey with 1 tsp salt, pepper, garlic powder and 2 TBSPs of your favorite BBQ sauce
  2. Heat pan with 1 Tbsp of Olive Oil
  3. Combine Turkey mixture together and form a ball, place into heated pan and press down and forming to flatten and form a patty. Cook for 5 minutes per side. 
  4. Prep burger bun with some mayo and mustard (or your favorite condiments)
  5. Turn patty after 5 minutes and top with bleu cheese and add a little more BBQ sauce
  6. Cover pan with lid to help melt cheese
  7. Do not be concerned about darkness of burger, it is BBQ sauce caramelizing
  8. Remove after 5 minutes and place on bun and serve.
