Spaghetti Squash Three Ways!

Ingredients:

For the Spaghetti Squash:
  • ½ Spaghetti Squash
  • 1 Roma Tomatoe
  • 1 Garlic Clove
  • Olive Oil
  • Salt and Pepper
  • Parsley
  • Parmesan Cheese
For the Spaghetti Squash Soup:
  • ¼ Spaghetti Squash
  • 1 Garlic clove
  • Butter
  • White Wine
  • Chicken Broth
  • Heavy Cream
  • Crouton
  • Salt and Pepper
For the Spaghetti Squash Egg Torte:
  • ¼ Spaghetti Squash
  • 4 Eggs
  • Olive Oil
  • Italian Seasoning
  • Salt and Pepper
  • Parsley
  • Goat Cheese

Directions for Spaghetti Squash

Preparation:

  1. Pre-heat oven to 400 degrees
  2. Working on a steady flat surface, insert a knife in the center of the spaghetti squash cutting downward rotating until cut through exposing the seeds.
  3. Scrap exposed seeds with a spoon and discard
  4. Line a sheet tray with aluminum foil
  5. Drizzle Olive oil over the fleshly pieces of the squash and season with 1 tsp of salt and pepper
  6. Place skin side up into 400-degree oven for approximately 40 minutes
  7. Once completely cooked remove from oven and let cool to handle
  8. Reserve ½ half for another dish

Instructions:

  1. Take squash and with a fork begin to flake away strands of squash starting on sides and reserve
  2. Smash 1 garlic clove and mince about 1 tsp
  3. Add 1 Tbsp. of Olive oil to a medium saute pan and begin to heat
  4. Add minced garlic
  5. Dice 1 Roma tomato and add to pan seasoning with a pinch of salt and pepper
  6. Add the spaghetti squash and toss
  7. Sprinkle some minced parsley into pan, then some parmesan cheese and toss
  8. Place onto plate topping off with parmesan cheese 

Directions for Spaghetti Squash Soup

Instructions:

  1. Melt 1 Tbsp. of butter in a medium pot
  2. Finely mince 1 small garlic clove and add into pot
  3. Stirring garlic
  4. Spoon out cooked spaghetti squash and allow to cook in pot
  5. Add ¼ cup of white wine and season with a pinch of salt and pepper
  6. Add ¼ cup of Chicken broth and allow to come to light boil
  7. Place immersion blender into pot and carefully puree ingredients until smooth, then add ¼ cup of heavy cream and heat stirring occasionally
  8. Remove from heat and place in bowl and serve with croutons

Directions for Spaghetti Squash Egg Torte:

Preparation:

  1. Pre -Heat oven to 400 degrees
  2. Crack and whisk 4 eggs until very frothy

Instructions:

  1. Using an oven safe pan scrap remaining spaghetti into pan and break up
  2. Add 1 Tbsp. of Olive Oil and saute
  3. Season eggs with 1 tsp. of salt, ½ tsp of pepper and Italian Seasoning
  4. Add 1 Tbsp. of fresh minced parsley
  5. Separate squash in pan and spread out
  6. Pour Eggs on top
  7. Then add 2 Tbsps. of Goat cheese and spread out in pan
  8. Place pan into oven for approximately 5 minutes or until it pulls apart from pan
  9. Plate and serve
